- 1/2 cups Water
- 1/4 cups Extra Virgin Olive Oil (winterized If Available)
- 1/4 cups Red Wine Vinegar
- 2 teaspoons Dijon Mustard
- 1/4 teaspoons Garlic Powder
- 1/2 teaspoons Salt
- 1 dash Ground Black Pepper
- 1/4 teaspoons Dried Thyme
- 1 can (15 Oz. Size) Chickpeas (Garbanzo Beans), Drained And Rinsed
- 1 whole Shallot, Finely Sliced
Directions

1Combine water, oil, vinegar, mustard, garlic, salt, pepper, and thyme in a 2-cup jar.

2Shake well to mix.

3Add chickpeas and shallot, cover and shake to coat.

4Place container in the refrigerator for 24 hours prior to serving.
