  • 1 1/2 teaspoons olive oil
  • 1/2 small onion, diced
  • 2 potatoes, diced
  • 1 head broccoli, cut into florets
  • 1 cup milk
  • 1 cup chicken broth
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground thyme

Directions

    Heat olive oil in a skillet over medium heat; saute onion until translucent, 5 to 10 minutes.

    Spread potatoes and broccoli onto a microwave-safe plate.

    Cook in microwave until tender, 4 to 5 minutes.
