Smothered Cabbage Wedges

Ingredients
- 1 medium head cabbage, cut in 8 wedges
- 1/2 c. finely chopped green pepper
- 1 c. finely chopped onion
- 4 Tbsp. butter or margarine
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 c. milk
- 1/2 c. mayonnaise or salad dressing
- 3/4 c. shredded natural Cheddar cheese
- 3 Tbsp. chili sauce
Directions

1In Dutch oven or large skillet, cook cabbage wedges in small amount of boiling salted water until tender (about 12 minutes). Drain.

2Place wedges in 13 x 9 x 2-inch baking dish.

3In saucepan, cook pepper and onion in butter until tender but not brown.

4Blend in flour, salt and pepper.

5Add milk all at once, cook and stir until mixture thickens.

6Pour over cabbage.

7Bake, uncovered, at 375° for 20 minutes.

8Combine mayonnaise, cheese and chili sauce. Spoon on wedges and bake 5 minutes more.
