Smothered Eggplant

Ingredients

  • 8 c. cubed eggplant
  • 1/2 c. oil
  • 1 medium chopped onion
  • 1 chopped bell pepper
  • salt and pepper to taste

Directions

    Peel eggplant and soak in salted water for 20 minutes.

    Drain. Heat oil and add eggplant, onion, bell pepper, salt and pepper. Cook, covered, on low fire until tender.

    (I like to eat this with a little rice.)
