- 1 pheasant
- 1/4 c. flour
- 1/2 tsp. pepper
- 4 Tbsp. butter or margarine
- 1 pt. commercially soured cream
Directions

1Clean pheasant, use little water as possible.

2Cut up as for frying.

3Combine 2 1/2 teaspoons flour, salt and pepper.

4Place in paper bag with pieces of pheasant; shake bag until meat is well coated.

5Melt butter in Dutch oven or covered skillet.

6Brown pheasant in this.

7Pour sour cream mixed with remaining salt over meat.

8Cover and bake for 2 hours until tender.
