Smothered Pheasant

  • 1 pheasant
  • 1/4 c. flour
  • 1/2 tsp. pepper
  • 4 Tbsp. butter or margarine
  • 1 pt. commercially soured cream

Directions

    Clean pheasant, use little water as possible.

    Cut up as for frying.

    Combine 2 1/2 teaspoons flour, salt and pepper.

    Place in paper bag with pieces of pheasant; shake bag until meat is well coated.

    Melt butter in Dutch oven or covered skillet.

    Brown pheasant in this.

    Pour sour cream mixed with remaining salt over meat.

    Cover and bake for 2 hours until tender.
