Smothered Yellow Squash

- about 15 small to medium yellow squash
- 1 large onion
- 1/4 lb. bacon or ham
- salt and pepper to taste
Directions

1Wash squash; cut off tips and trim dark spots.

2Do not peel unless needed.

3Spray heavy pan with Pam.

4Saute bacon (or ham) and onion.

5Add sliced squash.

6Cook on a low flame until squash is tender, stirring occasionally.

7After all squash are tender, remove lid and turn on a high fire to cook all the water out. Stir from the bottom of the pan very often.

8When all of the water is cooked out, squash is done.

9(Add salt and pepper to taste while cooking.)
