Smothered Yellow Squash

  • about 15 small to medium yellow squash
  • 1 large onion
  • 1/4 lb. bacon or ham
  • salt and pepper to taste

Directions

    Wash squash; cut off tips and trim dark spots.

    Do not peel unless needed.

    Spray heavy pan with Pam.
  4. 4
    Saute bacon (or ham) and onion.
  5. 5
    Add sliced squash.

    Cook on a low flame until squash is tender, stirring occasionally.

    After all squash are tender, remove lid and turn on a high fire to cook all the water out. Stir from the bottom of the pan very often.

    When all of the water is cooked out, squash is done.

    (Add salt and pepper to taste while cooking.)
