  • 1/2 c. finely grated Provolone cheese
  • 14 1/2 cubes Cheddar cheese
  • 2 c. cooked rice
  • 1 beaten egg
  • 1 c. crumbled bread crumbs
  • 1 Tbsp. melted butter
  • 1 tsp. salt
  • a generous dash of pepper
  • 2 tsp. French mustard

Directions

    Place rice and grated cheese in bowl and mix.

    Pack a ball of the rice and cheese mixture around each cube of cheese.

    Add butter, salt, pepper and mustard to egg before beating.

    Dip the rice and cheese balls in egg mixture first, then dip in bread crumbs.

    Deep fry for 7 minutes.

    Remove and let drain and cool on paper towels.
