- 1 package gingerbread cake mix
- 3/4 c. water
- 2 large eggs
- 2 tbsp. vegetable oil
- 1 package shredded carrots
- 1 c. toasted walnuts
Directions

1Preheat oven to 375 degrees F. Grease 9-inch-square cake pan.

2In large bowl, with wire whisk, stir cake mix, water, eggs, and vegetable oil until just blended.

3Stir in carrots and chopped toasted walnuts.

4Spread in prepared pan.

5Bake 50 to 55 minutes or until tester inserted in center comes out clean.

6Cool on wire rack.
