  • 1 1/2 to 2 pounds snapper fillets
  • Salt and freshly ground pepper to taste
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped yellow onion
  • 1 garlic clove, minced
  • 1 can (8 ounces) tomato sauce
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1 cup grated mozzarella cheese

    Preheat oven to 400F.

    Place fillets in a lightly sprayed or oiled 8-by-10-inch glass baking dish.

    Season generously with salt and pepper.

    In a medium skillet over medium heat, warm oil.

    Add onion and garlic and saute until tender, about 5 minutes.

    Add tomato sauce, oregano, and basil and simmer 1 to 2 minutes.
