  • 2 cans (4 oz. each) green chilies
  • 1 lb. grated mellow Cheddar cheese
  • 7 eggs
  • 1 1/2 c. Bisquick
  • 1 qt. milk
  • salt

Directions

    Butter a large shallow baking dish. Split and seed chilies (I use the mild ones) and spread flat in bottom of dish.

    Cover chilies with cheese.

    In a large bowl, beat eggs and add Bisquick and milk.

    Beat well with mixer.

    Pour egg mixture over peppers and cheese. Bake at 350° for 1 hour.

    Serves 8.
