  • 4 teaspoons Swerve
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup almond flower
  • 1 teaspoon baking powder
  • 1/8 teaspoon cream of tartar
  • 1 large egg
  • 2 tablespoons melted butter or avocado oil
  • 2 tablespoons water
  • 1/4 teaspoon vanilla extract
  • 1 pinch salt

Directions

    Whisk together 2 tsp Swerve and cinnamon for filling

    In a medium bowl, whisk together almond flower, remaining sweetener, baking powder, cinnamon, salt, and cream of tartar

    Add Egg, Butter/Oil, water, and vanilla extract and stir until well combined

    Divide half batter into two coffee mugs. Sprinkle cinnamon filling on top and fill the rest of batter into mugs

    Cook on high in microwave for one minute until puffed and just barely cooked through

    Remove and Serve immediately. Add cream or milk if desired
