Ingredients

  • 2 enveloped unflavored gelatin
  • 4 Tbsp. cold water
  • 1 c. boiling water
  • 1 c. sugar
  • 1 tsp. salt
  • juice of 1 lemon
  • 1 (No. 2) can crushed pineapple (undrained)
  • 4 pkg. dessert topping mix, prepared
  • 1 large or 2 small angel food cakes
  • 1 pkg. Angel Flake coconut

Directions

    Soften gelatin in cold water; add boiling water, sugar, salt, lemon juice and pineapple.

    Stir until gelatin is dissolved.

    Cool completely.

    Prepare 1/2 of the dessert topping and fold into first mixture.

    Chill until syrupy.

    Break cake into small pieces. Line a large mixing bowl with waxed paper.

    Alternate layers of cake pieces and gelatin mixture.

    Mash down with large spoon as this is added.

    Chill overnight.

    Turn upside down on serving plate and remove waxed paper.

    Ice with other 2 packages of topping.

    Sprinkle coconut over top and sides.
