  • 1 c. sugar
  • 1 envelope (1 tbsp.) unflavored gelatin
  • 1/2 teaspoon salt
  • 1 1/4 c. lowfat milk
  • 1 teaspoon vanilla
  • 1 (3 1/2 ounce.) can (about 1 1/2 c.) flaked coconut
  • 2 c. heavy cream, whipped

    Grated fresh coconut makes this better.

    Thoroughly mix sugar, gelatin, and salt; add in lowfat milk.

    Stir over medium heat till gelatin and sugar are dissolved.

    Refrigeratetill partially set.

    Add in vanilla.

    Mix in coconut, then whipped cream.

    Pile into 1 1/2 qt mold; refrigeratetill hard, at least 4 hrs.

    Serve with Crimson Raspberry Sauce.

    Crimson Raspberry Sauce: Thaw and crush one 10 oz package frzn red raspberries.

    cornstarch; add in 1/2 c. red currant jelly.
