- 6 Tbsp. sweet butter
- 3 c. all-purpose flour
- 1 1/2 tsp. salt
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 3/4 c. granulated sugar
- 1 1/2 c. dried currants
- 1 3/4 c. buttermilk
- 2 eggs, well beaten
- 1 Tbsp. caraway seed
Directions

1Smear 2 tablespoons of the butter evenly in a 10-inch cast-iron skillet.

2Line the buttered skillet with a circle of waxed paper. Melt 2 more tablespoons butter and set aside.

3Preheat oven to 350°.

4Sift dry ingredients together.

5Add currants to dry ingredients.

6Toss well.

7Whisk together buttermilk, eggs and melted butter.

8Add to the dry ingredients.

9(Add caraway seed, if desired.)

10Mix until just blended.

11Spoon batter into the prepared skillet and smooth top.

12Dot the top with remaining 2 tablespoons butter.

13Bake until golden brown and puffed, about 60 minutes. Cool slightly; remove from skillet and cool completely on a rack.
