Ingredients

  • 2 pounds Lean Ground Beef Or Ground Turkey
  • 2 packages Dry Taco Seasoning Mix
  • 2 cans Beans, Your Choice; Drained & Rinsed
  • 1 can Whole Kernel Corn, Drained
  • 1 can Rotel (whichever Kind Floats Your Boat)
  • 1 bag Shredded Cheese, Your Choice (2 Cup Size)
  • 1 package Flour Tortillas

Directions

    - Brown ground meat and drain any fat;

    Add 2 packets taco seasoning mix, plus water called for according to the package directions; Blend well;

    Add beans, corn, & Rotel; Blend well;

    Bring mixture to a boil, then reduce heat to simmer for 10 minutes; remove from heat;

    Stir in half of the shredded cheese, until cheese is melted and completely blended;

    Heat oven to 325

    Assembly:

    Spray 9x13 pan with pan spray;

    place flour tortillas to cover bottom of pan;

    spread about 1/3 of the meat mixture over the tortillas;

    place another layer of tortillas, then spread another 1/3 of the meat mixture;

    place a third layer of tortillas, and then spread the remaining meat mixture over that;

    sprinkle with the remaining shredded cheese;

    bake in 325 degree oven for 25-30 minutes, until hot & cheese is melted and bubbling;

    let rest for 10 minutes before cutting;

    Serve with lettuce, salsa, sour cream, jalapeno or banana peppers, or whatever extras you enjoy with tacos.
