  • 4 Tbsp. butter
  • 3 Tbsp. minced shallots
  • 3/4 tsp. curry powder
  • 2 lb. sole fillets, cut crosswise into 1 1/2-inch strips
  • 1 Tbsp. canned green peppercorns
  • 1 Tbsp. lemon juice
  • 1 c. cream

    In a wide frying pan over medium heat, melt butter.

    Add shallots, curry and fish.

    Turn heat to high and gently shake. Turn fish over carefully.

    Cook for a total of 3 to 5 minutes until fish flakes in thickest portion.
