- 4 Tbsp. butter
- 3 Tbsp. minced shallots
- 3/4 tsp. curry powder
- 2 lb. sole fillets, cut crosswise into 1 1/2-inch strips
- 1 Tbsp. canned green peppercorns
- 1 Tbsp. lemon juice
- 1 c. cream
Directions

1In a wide frying pan over medium heat, melt butter.

2Add shallots, curry and fish.

3Turn heat to high and gently shake. Turn fish over carefully.

4Cook for a total of 3 to 5 minutes until fish flakes in thickest portion.
