- 1 pound sole fillets
- 1 each egg yolks
- 1/4 cup milk
- 18 teaspoon salt
- 1 dash black pepper
- 3/4 cup bread crumbs dry
- 3/4 cup peanut oil
Directions

1Cut fillet of sole diagonally into 1/2 inch strips.

2Beat together egg yolk, milk, salt and pepper until well blended.

3Soak fish strips in egg mixture for a few minutes.

4Coat fish with bread crumbs.

5Roll each piece between palms to get a rounded strip.

6Fry in shallow hot oil (375 degrees F) until golden brown (3 minutes).

7Drain on paper towels.

8Serve on warm platter.
