  • 24 None oysters, shucked, bottom shells cleaned and reserved
  • 1/3 cup heavy cream
  • 2 tbsp finely grated Parmesan cheese
  • 1 None large egg white
  • 2 tbsp finely chopped fresh chives

Directions

    Preheat oven to 400°F. Arrange oysters in shells on a baking tray.

    Combine cream and 1/2 the Parmesan. Season to taste. Whip egg whites to stiff peaks then fold into cream mixture. Spoon 1 tbsp over each oyster then sprinkle with remaining cheese and chives. Bake for 5-10 mins, until golden and puffed.
