  • 3 large ripe tomatoes
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 clove minced garlic
  • 1 to 2 tablespoons fresh parsley
  • 1 to 2 tablespoons fresh basil
  • 2 tablespoons chopped onions
  • crumbled feta cheese

    Slice tomatoes. Combine all other ingredients except feta cheese. Marinate tomatos in ziplock bag for 2 hours in the refrigerator. Arrange tomatoes on serving plate and sprinkle with feta cheese. The prettier the tomatoes, the better the dish!
