- 2 c. brown sugar, packed
- 1/2 c. melted butter
- 1 c. cooked pinto beans, mashed
- 1 unbaked pie shell (10-inch)
- 1 Tbsp. vanilla
- 4 eggs, beaten
- crushed pecans (optional)
Directions

1In mixing bowl, beat together sugar, butter, vanilla and eggs. Stir in pinto beans.

2Beat with mixer and pour into pie shell. Bake at 350° for 45 to 50 minutes or until done with knife test. Serve warm or chilled with whipped cream or ice cream.
