  • 2 c. brown sugar, packed
  • 1/2 c. melted butter
  • 1 c. cooked pinto beans, mashed
  • 1 unbaked pie shell (10-inch)
  • 1 Tbsp. vanilla
  • 4 eggs, beaten
  • crushed pecans (optional)

Directions

    In mixing bowl, beat together sugar, butter, vanilla and eggs. Stir in pinto beans.

    Beat with mixer and pour into pie shell. Bake at 350° for 45 to 50 minutes or until done with knife test. Serve warm or chilled with whipped cream or ice cream.
