Sourdough Flapjacks

Ingredients

  • 1 pkg. yeast
  • 1 c. water
  • flour
  • 1/4 tsp. baking soda
  • 3/4 tsp. salt
  • 1 Tbsp. sugar
  • 1 or 2 eggs

Directions

    Place one package yeast in a deep bowl.

    Add one cup water and stir to dissolve yeast.

    Add enough flour to make mixture stiffer than waffle batter.

    Cover bowl and let stand overnight.

    The next morning, stir in 1/4 teaspoon baking soda, 3/4 teaspoons salt and 1 tablespoon sugar.

    Add 1 or 2 eggs.

    One egg for heavy batter or 2 eggs for thinner batter.

    Cook on griddle pan just like pancakes.
