  • 4 partridge breasts
  • 1 cup olive oil
  • 1 onion, sliced
  • 5 garlic cloves, roasted
  • 2 bay leaves
  • 2 tablespoons vinegar
  • salt & pepper

Directions

    Heat the olive oil and add all the ingredients.

    cook slowly in a covered casserole until tender.Should the sauce become reduced and partridge are still tough, add 1 cup water (or more) until tender.

    Serve cold.
