  • 1-1/2 cup Vegetable Oil
  • 4 whole Eggs
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 teaspoons Cinnamon
  • 2 cups Grated Carrots
  • Your Favorite Cream Cheese Frosting

    Mix sugar, oil, and eggs (and canned pineapple if you like that in your cake!). Combine dry indgredients and add to the batter. Fold in carrots. Grease and flour 2 round cake pans or one 9x13 pan. Bake at 350°F for 30-40 minutes. Cool and frost with cream cheese frosting.
