  • 3 c. white corn meal
  • 1 c. flour
  • 1 Tbsp. sugar
  • 1 Tbsp. butter
  • 1 tsp. salt
  • 3 eggs
  • 2 c. milk
  • 2 tsp. (heaping) baking powder

Directions

    Thoroughly sift together into bowl the flour and white corn meal. Stir in sugar and salt; rub in the butter. Beat the eggs thoroughly and add to the mixture with the milk. Lastly, add in the baking powder and mix with a spoon to a stiff batter; pour into well-greased pans and bake quickly in a preheated oven at 425° or 450° for 25 minutes or until top is golden.
