  • 2 c. fresh (cut off cob) or frozen corn
  • 3 eggs
  • 2 Tbsp. melted butter
  • 2 c. milk or cream
  • 1/2 to 1 tsp. sugar
  • salt and pepper to taste
  • cracker crumbs

Directions

    Beat eggs well and add to corn.

    Melt butter and add to milk. Add spices.

    Add to corn and eggs and stir well.

    Pour into well-greased casserole dish.

    Sprinkle top with cracker crumbs. Bake in a very slow 250° oven for 40 to 60 minutes, until custard is set. (Knife stuck into the center will come out clean.)

    Serves 4 to 6.
