- 1 c. flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. milk
- 2 eggs
- 2 (3 1/2 lb.) chickens, cut into pieces
- 1/2 c. peanut oil
Directions

1Combine flour, salt, pepper, milk and eggs; mix well.

2Dip chicken pieces in batter; set aside.

3Pour oil into frying pan; heat to 350°.

4Gently place chicken, skin side down, in skillet. Turn pieces of chicken over when beginning to brown.

5When all pieces are lightly browned, reduce heat and cover.

6Cook for 25 to 30 minutes.

7Uncover and cook 10 to 15 minutes more or until large pieces are easily pierced with fork.

8Drain chicken on paper towels.
