- 2 c. (No. 2) canned black-eyed peas
- 8 slices bacon, diced
- 1 1/2 c. chopped onion
- 1 green pepper, chopped
- 2 buds garlic (optional)
- 4 c. water
- 2 c. uncooked rice
- salt and pepper
Directions

1Fry bacon until brown.

2Add onion and green pepper and cook until tender.

3Combine with peas and water.

4Add salt, garlic and pepper.

5Bring to boil and simmer, covered, for 30 minutes.

6Stir in uncooked rice and simmer 30 minutes longer or until rice is tender and fluffy.

7Serves 8.
