- 3 Tbsp. butter
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. chopped red pepper
- 1 Tbsp. thyme
- 2 c. cooked rice
- 1 egg
- 3 Tbsp. all-purpose flour
- 3 Tbsp. cornstarch
- 3 Tbsp. cream
- pinch of cayenne pepper
- salt and pepper
- clarified butter or margarine
Directions

1Heat butter in medium skillet.

2Add onion, green pepper, red pepper and thyme.

3Saute lightly.

4Remove from heat.

5Pour into mixing bowl.

6Add rice and egg.

7Stir in flour and cornstarch. Add cream and cayenne.

8Season with salt and pepper.

9Add more cream, if necessary, to make a smooth batter.

10Heat clarified butter in skillet.

11Add scoops of rice cake mixture.

12Press down with spatula.

13Cook until browned on both sides.
