  • 1 (14 ounce) can coconut milk, high-quality
  • 2 g coconut vinegar
  • 6 g sugar
  • 4 g salt
  • 6 g agar-agar

Directions

    Whisk all ingredients in a sauce pan until dissolved.

    Turn on heat and increase slowly, allowing it to simmer for 2-3 minutes.

    Remove from heat and pour into a shallow container.

    Allow the mixture to set.

    Once set, puree in a food processor.

    Set aside for 24 hours.

    The coconut milk mixture should begin to weep from vinegar and begin to look like ricotta cheese.
