- 3 c. milk
- 1 1/4 c. yellow cornmeal
- 3 eggs
- 1 tsp. salt
- 2 Tbsp. butter or margarine, melted
- 1 3/4 tsp. baking powder
Directions

1Bring milk to full rapid boil.

2Stir in cornmeal.

3Cook until very thick, stirring constantly, to prevent scorching.

4Remove from heat and cool slightly.

5Beat eggs well.

6Add to cornmeal mixture with salt, butter and baking powder.

7Beat for 5 minutes.

8Pour into well-greased 1-quart round casserole.

9Bake in preheated oven at 375° for 30 minutes or until golden brown.

10Serves 4 to 5.
