- 4 c. milk
- 1 tsp. salt
- 1 c. cornmeal (white preferred)
- 2 heaping Tbsp. butter
- 4 eggs, well beaten
Directions

1Preheat oven to 450°.

2Pour 4 cups milk in the top of a double boiler.

3Add 1 teaspoon salt.

4Bring to a simmer but do not boil. Add cornmeal, stirring slowly and constantly.

5Continue stirring until the mixture takes on a light consistency.

6Add butter.

7Stir until melted, then stir in eggs.

8Allow mixture to come to a simmer, then remove from the heat.

9Stir vigorously, then pour into a well-buttered 2-quart souffle dish.

10Place in oven for 15 minutes.

11Lower heat to between 400° and 425° and bake another 20 minutes.

12Test with a straw.

13If center is not firm, give it another 5 minutes.

14Serve immediately.
