- 2 c. white cornmeal
- 2 1/2 c. water
- 1 1/2 Tbsp. butter, melted
- 1 1/2 tsp. salt
- 2 egg yolks, lightly beaten
- 1/2 c. buttermilk
- 2 egg whites, beaten stiff
Directions

1Add cornmeal gradually to boiling water and let stand for a few minutes.

2Add butter, salt and yolks; add buttermilk.

3Fold in egg whites.

4Turn into a buttered casserole dish.

5Bake at 375° for 40 minutes.
