- 1/4 cup all-purpose flour
- 1/4 cup yellow cornmeal
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 teaspoons sugar
- 1/4 cup skim milk
- 1 1/2 teaspoons vegetable oil
- 1 egg white, lightly beaten
- Vegetable cooking spray
Directions

1Combine first 5 ingredients in a medium bowl; make a well in center of mixture. Combine milk, oil, and egg white; add to dry ingredients, stirring just until dry ingredients are moistened.

2Coat 4 molds of a cast-iron corn stick pan with cooking spray, and place in oven for 3 minutes or until hot. Remove pan from oven; spoon batter evenly into 4 molds, filling each three-fourths full. Bake at 425° for 14 minutes or until golden.
