- 1 pound Yellow Squash
- 1/2 cups Chopped Onion
- 1 cup Peeled, Seeded, Chopped Tomatoes
- Salt And Pepper, to taste
- 3 Tablespoons Bacon Grease
- 6 slices American Cheese

1Preheat oven to 350 degrees. Spray a 1-quart casserole dish with nonstick cooking spray.

2Cut squash into 1/4-inch slices. Place squash and chopped onion in a medium saucepan. Add water just to cover the vegetables. Bring to a boil and simmer 5 minutes, then drain thoroughly.

3Combine squash, onion, tomatoes, salt and pepper and pour into prepared casserole dish. Drizzle bacon grease over the squash and top with sliced cheese. Bake for 20-25 minutes until heated through and cheese is melted.
