  • 8 oz. spaghetti
  • 1/2 c. 2% low-fat milk
  • 1 egg
  • 1 lb. lean ground pork
  • 1 c. chopped onions
  • 1 chopped green bell pepper
  • 1 large garlic clove, minced
  • 1/2 tsp. ground cumin
  • 1/2 tsp. oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 16 oz. canned tomato sauce
  • 4 oz. jalapeno pepper Monterey Jack cheese
  • 4 oz. grated Cheddar cheese

    Preheat oven to 425°.

    Cook pasta according to package directions.

    Whisk together the milk and egg and mix in the hot pasta.

    Spread the mixture in a buttered 9 x 13-inch baking dish. Cook the pork, onion, green pepper and garlic together in a large skillet for about 6 minutes over medium heat until pork is cooked through.

    Drain excess fat.

    Stir chili powder, cumin, oregano, salt and black pepper into the pork and cook for about 2 minutes. Stir in tomato sauce and cook 2 minutes more.

    Spread meat over pasta in baking dish.

    Sprinkle both cheeses evenly over top.

    Bake in lower third of oven for about 10 minutes, until cheese is melted and casserole begins to bubble.
