Southwest Taco Pie

  • 1 deep dish pie crust
  • 1 lb. ground chuck
  • 3/4 c. chopped onions
  • 1 pkg. taco seasoning mix
  • 1 can refried beans
  • 1 jar taco sauce, divided usage
  • 1 c. shredded Cheddar cheese
  • shredded lettuce
  • chopped tomatoes

Directions

    Preheat oven and baking sheet to 400°. Partially bake pie crust for 10 minutes; cool. Reduce oven temperature to 350°. Brown ground chuck and onion in a skillet; drain fat.

    Stir in taco seasoning mix and a little bit of water.

    Combine refried beans and 1/2 cup taco sauce in a mixing bowl. Layer 1/2 meat mixture in bottom of pie shell, then half of bean mixture. Sprinkle cheese on top. Bake 25 minutes. Remove from oven; cool, then top with lettuce, tomatoes and sauce. Makes 6 servings.
