Yogurt-Lime Smashed Potatoes

- 1 1/2 lb. red potatoes
- 1/4 c. low-fat (1 percent) milk
- 1/2 c. fresh cilantro leaves and stems
- 1 tsp. salt
- 1 tsp. grated fresh lime zest
- 1/4 tsp. ground black pepper
- 1 container plain low-fat yogurt
Directions

1In 4-quart saucepan, place potatoes and enough water to cover; heat to boiling over high heat.

2Reduce heat to low; cover and simmer 10 to 12 minutes or until potatoes are fork-tender.

3Drain.

4Return potatoes to saucepan.

5With potato masher, coarsely mash potatoes.

6Stir in milk.

7Add cilantro, salt, lime zest, pepper, and yogurt, and continue to mash until well blended but still lumpy.

8Heat through if necessary.
