Southwestern Corn Soup

Ingredients
- 3/4 c. slivered toasted almonds
- 3 c. corn kernels (frozen)
- 4 Tbsp. butter
- 1/2 c. carrots, chopped
- 1/2 c. celery, chopped
- 1/2 c. onion, chopped
- 1 clove garlic, minced
- 1 to 2 tsp. cumin
- 3 cans chicken broth
- 1/2 tsp. white pepper
Directions

1Melt butter and saute carrots, onion and celery until tender. Add garlic and cumin; heat 1 minute.

2Add broth, pepper and corn. Simmer 20 to 25 minutes.

3Add almonds.

4Process in blender or food processor.

5Garnish with sour cream, Cheddar cheese, cilantro and green onion.

6Serve with pita bread wedges, toasted with cheese, green chilies and black olives.
