Broccoli Chowder

Ingredients

  • 1 medium onion
  • 1 lb. broccoli (can use asparagus or cauliflower instead)
  • 3/4 c. celery
  • 3 potatoes
  • 2 carrots, sliced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 can chicken broth
  • 1 qt. milk
  • 2 to 4 Tbsp. cornstarch
  • 1 c. shredded cheese

Directions

    Chop vegetables and add to 1 can of chicken broth (2 to 3 cups).

    May use bouillon.

    Cook 20 to 30 minutes.

    Add 1 quart of milk and bring to a boil.

    Thicken with 2 to 4 tablespoons of cornstarch.

    Add cheese.

    Beat with spoon until melted.

    Do not boil.
