  • 3/4 cups Yellow Cornmeal
  • 3/4 cups All-purpose Flour
  • 4 Tablespoons Sugar
  • 2 teaspoons Baking Powder
  • 1 cup Milk
  • 1 whole Egg
  • 1/4 pounds Butter, Melted
  • 1 cup Sharp Cheddar Cheese, Shredded
  • 1/2 whole Bell Pepper, Chopped
  • 1/2 whole Medium Onion, Chopped
  • 1 whole Jalapeno Pepper, Seeded And Minced
  • 3 strips Bacon, Cooked Crisp And Chopped

Directions

    Preheat oven to 375 F. Grease (butter) an 8 x 8 baking dish. In a large mixing bowl combine the cornmeal, flour, sugar, and baking powder. In a separate mixing bowl, wisk together milk, egg and melted butter. Blend together wet and dry mixtures. Fold in remaining ingredients. Pour/spoon into the greased baking dish.

    Bake in the oven 25 to 35 minutes, until a toothpick comes out clean. Remove from the oven and allow to set for 5 minutes before cutting. Serve hot with softened butter or honey, if available. Enjoy!
