Southwestern Pimento Cheese

Ingredients

  • 16 ounces shredded sharp cheddar cheese (not the fancy or finely shredded)
  • 2 tablespoons chopped red onions
  • 3 tablespoons chopped fresh cilantro
  • 1/2 teaspoon cumin
  • 1 -2 teaspoon chili powder (mild or hot to taste)
  • 1 tablespoon chopped fresh jalapeno
  • 4 ounces pimientos, drained
  • 1/2 cup mayonnaise (Hellman's)
  • salt and pepper (optional)

Directions

    Combine first 7 ingredients. Stir in mayo until combined. Taste and add salt / pepper if necessary. I find the cheese and spices usually do not need additional salt.

    If you can find it, use chipotle chile powder - it give the dip a wonderful smoky taste.
