  • 1/2 lb. large shrimp
  • 1/4 c. finely chopped cilantro
  • 1 finely chopped jalapeno (remove seeds for milder dish)
  • 2 Tbsp. olive oil
  • plain boiled rice
  • 1/4 c. finely chopped green onion
  • 1/4 c. tomato sauce

    Peel and devein shrimp; cut in half.

    Heat oil in nonstick pan over medium-high heat. Saute onion, cilantro and jalapeno for 5 minutes. Stir in tomato sauce. Add shrimp and stir until shrimp turns pink. Serve over white rice. Serves 2.
