Southwestern Tuna

Ingredients

  • 2 (6 1/8 oz.) cans albacore tuna packed in water
  • 1 c. diced celery
  • 1/2 c. diced green bell pepper
  • 1/2 c. diced red bell pepper
  • 3/4 c. chopped hamburger dills
  • 1/2 c. chopped yellow onion
  • 2 heaping Tbsp. chopped fresh parsley
  • 1/2 c. chopped fresh cilantro
  • 1 jalapeno, chopped (seeds and all)
  • 1/3 c. mayonnaise
  • 1 Tbsp. Dijon mustard
  • juice of 1 lemon

Directions

    Drain tuna.

    Mix mayo, mustard and lemon juice together; pour over drained tuna.

    Mix together well and add rest of ingredients. Stir together.

    Makes about 5 cups.
