Soy Bean Hamburger Steaks

Ingredients

  • 200 grams Cooked soy beans
  • 1/4 Onion
  • 3 cm Carrot
  • 5 Shiso leaves
  • 3 tbsp Katakuriko
  • 1 1/2 tbsp Soy sauce
  • 1 3 cm knob Grated ginger
  • 1 tbsp Ground sesame seeds
  • 1 tsp Sugar
  • 1 dash Salt and pepper
  • 1 dash Nutmeg
  • 1 tsp Japanese dashi stock powder
  • 1 bunch Mushrooms of your choice
  • 150 ml Dashi stock
  • 2 tbsp Soy sauce
  • 1 tbsp Mirin
  • 1 tbsp Sugar
  • 1 tbsp Katakuriko dissolved in water
  • 1 Green onions or scallions

Directions

    Crush the cooked soy beans with your pestle & mortar or in a food processor.

    Chop the onion and carrot finely and microwave for two minutes.

    Julienne the shiso leaves.

    Put all the ingredients except the sauce ingredients into a bowl and mix together.

    Shape the mixture into small balls and fry in a frying pan with oil until crispy and golden on both sides.

    In the same frying pan stir-fry the mushroom quickly and add the dashi stock, soy sauce, sugar and mirin.

    Check the taste and if it is alright, add the katakuriko dissolved in water to thicken the sauce.

    Sprinkle with chopped green onion and pour over the burgers.
