Spagetti & Cauliflower

Ingredients

  • One head cauliflower or 2 packages frozen
  • One lb spagetti
  • One large onion chopped
  • Grated Italian cheese
  • Salt and Pepper
  • Olive Oil

Directions

    One head of cauliflower cooked until tender (if using frozen use 2 packages)

    Saute one large chopped onion in 1/4 cup olive oil add cooked cauliflower (break up with a wooden spoon)to sauted onion. Salt & pepper to taste. Simmer.

    Break up spagetti into three pieces and cook as directed. Drain and save about 1 cup of the pasta water.

    Mix pasta together in pan with onion and cauliflower. Add 3/4 to a cup of grated Italian cheese.

    Put in a serving bowl add cracked pepper and some of the pasta liquid if too dry. Enjoy.
