  • 12 oz. spaghetti
  • 2 Tbsp. olive oil
  • 4 cloves garlic
  • 3/4 c. onion, chopped
  • 1 lb. chicken breast halves (in 1-inch pieces)
  • 3 c. tomato chunks
  • 1 c. black olives, pitted
  • 1 c. chicken broth
  • 1/2 c. basil leaves

Directions

    Bring pot of salted water to boil; cook spaghetti until tender, 8 to 10 minutes.

    While spaghetti is cooking, make sauce. Put oil, garlic and onions in a skillet over medium-high heat. Saute until onion is soft but not browned.

    Add chicken meat; cook 3 to 4 minutes, stirring often.

    Add tomatoes, olives and chicken broth.

    Simmer for 3 minutes; add basil.

    Drain spaghetti; return to pot.

    Toss with chicken mixture.
