Ingredients

  • 2 hard-boiled egg yolks
  • 1 garlic clove
  • 1 dash Tabasco
  • fresh ground pepper
  • 4 c. strained tomatoes
  • 1 green pepper, chopped
  • 2 hard-boiled egg whites
  • 2 Tbsp. olive oil
  • 1 1/2 tsp. Lea & Perrins
  • 1/2 tsp. salt
  • juice of 1 lemon
  • 4 celery stalks, chopped fine
  • 1 small cucumber, chopped fine
  • 6 thin slices lemon

Directions

    In bottom of bowl, mash egg yolks with olive oil.

    Blend to smooth paste.

    Stir in garlic, seasoning and lemon juice; then tomatoes, celery, cucumber and green pepper.

    Chill at least 4 hours (best overnight).
