- 2 hard-boiled egg yolks
- 1 garlic clove
- 1 dash Tabasco
- fresh ground pepper
- 4 c. strained tomatoes
- 1 green pepper, chopped
- 2 hard-boiled egg whites
- 2 Tbsp. olive oil
- 1 1/2 tsp. Lea & Perrins
- 1/2 tsp. salt
- juice of 1 lemon
- 4 celery stalks, chopped fine
- 1 small cucumber, chopped fine
- 6 thin slices lemon
Directions

1In bottom of bowl, mash egg yolks with olive oil.

2Blend to smooth paste.

3Stir in garlic, seasoning and lemon juice; then tomatoes, celery, cucumber and green pepper.

4Chill at least 4 hours (best overnight).
