Spaghetti Frittata

Ingredients

  • 1/8 lb. thin spaghetti, cooked, drained, rinsed and cooled
  • 1 egg, beaten
  • 2 Tbsp. Parmesan cheese
  • salt and pepper to taste
  • pinch each of oregano and basil
  • olive oil (for frying)

Directions

    Blend all ingredients together, and brown on one side in a small frying pan in a bit of olive oil.

    Top with more cheese, and place under broiler until crusty and lightly browned on top. Serves 2 to 3 as an antipasto.
