- 1/4 cup olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 1 sprig thyme
- 2 lbs ripe plum tomatoes, cored and chopped
- 13 oz spaghetti
- 1/2 bunch basil, leaves chopped
- None None Shaved Parmesan cheese, to serve
Directions

1Heat oil in a large saucepan on medium heat. Cook and stir onion and garlic for 5 mins or until golden. Add thyme and tomato; bring to a boil. Reduce heat to low; simmer, uncovered, for 40 mins or until sauce is thick.

2Meanwhile, cook pasta in saucepan of boiling salted water according to package directions. Drain.

3Add basil to sauce; cook and stir for 5 mins. Season to taste with salt and freshly ground black pepper. Serve pasta topped with sauce and sprinkled with cheese.
