Spaghetti Omelet

Ingredients
- 4 eggs
- 350 g cooked spaghetti
- 3 large garlic cloves, mashed and chopped
- 1 head broccoli, cooked mashed and chopped
- 12 cup of cooked small cocktail shrimp instead broccoli
- 12 teaspoon thyme or 12 teaspoon parsley
- 3 tablespoons olive oil
- 2 tablespoons romano cheese or 2 tablespoons parmesan cheese
Directions

1In a large bowel mix the eggs, garlic, thyme/parsley, broccoli/shrimp, 1 tablespoon cheese and let sit for 5-10 minute.

2If the spaghetti is still hot run it under cold water.

3When the pasta is cooled mix it well with the egg mixture.

4Heat the olive oil in a large frying pan until very hot but not smoking.

5Add the pasta mixture and fry up until golden crisp and flip over to the other side and top with one tablespoon of cheese.

6The omelet texture should be cooked enough so you will need a pizza cutter to cut up like pizza slices.

7Serve with additional cheese on the side.

8You can serve with ketchup, however, once you become good at it I've had people say that the ketchup is sacrilegious, although the kids like it!.
